Her palette of spices has been trimmed, and where once she would have told us first to brown the onion and ginger, then the spices, then the meat, now she often marinates it all together, bakes it, and “the curry absorbs the spices and is delicious”. Try spinach and ginger soup perfumed with cloves (“perfect for cold winter days”), or Indian scrambled eggs.
